Picnic Cupcakes with Chocolate Kahlua Whipped Filling

These liners! I die! They were just too cute to pass up.


I piped grass with a grass tip and made an ant out of chocolate chips and chocolate sprinkles (or do you call them jimmies?).

Maybe I should warn you I also say “pop” instead of “soda”. Just so you’re not startled when it finally happens.


I filled the cupcakes with a Chocolate Kahlua Whipped Filling because I was having a rough night and thought I could pretend it was the “dirt” beneath the grass.

Win-win, if you ask me.


Chocolate Kahlua Whipped Filling

Yields filling for 24 cupcakes +

(what you do with the leftovers is between you and the mixing bowl)


1 1/2 cups heavy whipping cream

1/2 cup of confectioners sugar, shifted

1/2 teaspoon vanilla extract

2 heaping tablespoons of cocoa powder

2 tablespoons of Kahlua (+/- to taste, of course)


With an electric mixer fitted with a cold mixing bowl and cold beaters (I put mine in the fridge for a few hours), beat cream until soft peaks form. Add confectioner’s sugar and continue to beat until stiff peaks form. DO NOT OVERBEAT! Remove from mixer and fold in vanilla, cocoa powder and Kahlua. Careful not to overmix.
