Margarita and Strawberry Daiquiri Cake Pops

Happy almost Cinco de Mayo!!

Who doesn’t appreciate a great party (fiesta?) or a good mixed drink?

I added Margarita and Strawberry Daiquiri Jell-O mix to cake batter to make these cake pops. I only needed half a package of Jell-O mix  for half a box of white cake mix. After baking the cake, mashing the cake, and mixing the frosting into the cake, I sprinkled a little more of the Jell-O mix into the cake pop mixture, to taste.

 Yes, I used a box mix. Sometimes I do that. Especially with cake pops. Judge all you want.

I sprinkled large red sugar crystal on the daiquiris, for crushed ice. The margaritas are sprinkled with small light green sugar crystals along the rim, for salt.

I actually prefered the margarita. Strawberry daiquiri just tasted like strawberries (nothing special), but the margarita had a nice kick to them.

There are no alcohol in these, because I like to share the things I make with the kid. I’m sure they would be even better with a shot of tequila and triple sec or rum.

I seem to be on a red and green kick right now… the next post isn’t red or green, I promise.
